Tom Collins

The Tom Collins is a refreshing 19th-century classic of gin, lemon juice, simple syrup, and soda water, served tall over ice. Often credited to bartender John Collins of London's Limmer's Hotel, it gained fame in the United States during the 1874 "Great Tom Collins Hoax". Its bright citrus and effervescent finish have kept it a fixture of summer cocktail menus for generations.
